One property of a Queue that you can configure in Administrator is "Copy Printer Settings". If you set this property to "Yes" before before you build the Package, the Package should attempt to duplicate the settings you have configured under "Printing Defaults" in the printer's properties (but not any user-specific printing preferences for your particular user account). Does this solve your problem?
My apologies – I always forget to mention something when doing up these questions Yes, I always use that setting by default. And it IS copying across tray settings, etc. but not the colour setting for some strange reason…
Starting to think I need to look at options/possibilities of other drivers for these machines… but I’ll have a bit more of a play first, see if I can find something.
I did have some problems with two color Canons holding color options with the Canon unified driver. I had to switch up to the driver for that model. Once I did that the settings stayed.

Thanks for that Timothy - I am actually using the specific drivers for this machine, rather than the Universal ones (the project team had some issues with the universal for packaging for rollout in our staff environment, apparently, so I avoided it).
However, just wanted to report back that I seem to have resolved it... somehow. Went through the process again of setting it up, after completely removing everything, and this time the settings seem to have stuck. It's possible I missed a step in the process doco I wrote up awhile ago for this... twice... I guess.
Anyways - working now. The colour preferences are now B&W by default, so everyone should be happy.
